We are huge fans of Sharon Wee, cake designer extraordinaire. She offers on-line tutorials on figure modeling, including how to make the elephant we used on top of the Elephun Cake. The tutorials are easy to follow with great instruction and pictures
If you're going to create an elephant or other figure out of gumpaste, it's a good idea to make an extra or two just in case the first one breaks
We prefer to frost our cakes in chocolate ganache when we know we are going to cover the cakes in fondant. When chocolate ganache sets, the hard shell is a perfect canvas for placing fondant on
