Madeleines are buttery little cakes originating in the Lorraine region of Northeastern France. They are easily recognizable by their scalloped shell look, and light delicious flavor. These cakes are also known to taste great right out of the oven with a glass of tea, but we enjoy these cakes hot and fresh, warm, room temp, days old, stale.. ok, that's a bit much, but you get the idea. Madeleines can be baked in many flavor profiles, but we typically like to add a little lemon zest for just a hint of citrus flavor. The zest also complements the other desserts in the Hearts Experience.

There are many recipes out there to make madeleines, but we’ve been using one from Joy of Baking that we love. She even has a madeleine video which is very helpful. And If you’re ever in need of a recipe for something else, have no fear because Joy Of Baking has a delicious recipe for just about anything - complete with a video to go along with it
Always make sure that your eggs are at room temperature. This will allow the protein in the egg to whip up at a higher volume. If you are about to start your recipe and have forgotten to take your eggs out earlier, just set them in a bowl of warm water (not hot - we don't want to cook them) for about 5-10 minutes. While they are warming you can get your pans buttered and floured
