Inside, we chose chocolate cake with a marshmallow filling that few can resist. And for a birthday, simply throw a chocolate number on top to make sure the birthday boy or birthday girl can get the full "Soar Into Another Year" experience.

Covering a cake in fondant is NOT one of the easiest techniques to master. But the great thing about the Up In The Clouds Cake, is that you can cover your mistakes with a cloud border, mini clouds, or a hot air balloon. You can still practice perfecting your technique, knowing that you have some room to hide any mistakes
If you don't like to use modeling chocolate, you can stick with fondant for your decorations. We suggest adding some tylose powder to the fondant to decrease drying time
Finding templates online can be easy. Once found, transfer the pattern onto your fondant or modeling chocolate with an X-acto knife. Beware what surface you're cutting on as the X-Acto knife is very sharp

We usually use pure white, but feel free to choose a color that works for you
