What is Plugra
Plugra, as it says right on the packaging, is a "European Style" butter. It's made in the U.S. and has a higher fat content than the normal or "traditional" butter found in America. Wheras you can expect standard American butter to contain 80% fat, Plugra contains 82% fat, and trust us when we say that the 2% can make a huge difference when it comes to the final product. The name Plugra, or plus gras, is in fact French for "more fat". Yum...
Where You Can Buy Plugra
We know you can get Plugra at Whole Foods, but you might want to check your local grocery stores as well. We found our local store just started carrying Plugra, which we assume means it's gaining more of a mass market appeal and no longer just carried in speciality stores. And in a pinch, you can even buy Plugra from
Amazon.com, although we're not 100% sure how well butter ships.
Why We Love Plugra
We started using Plugra in pastry school, which gave all the pastries and desserts we made an excellent flavor. It wasn't until after school, and when we incorporated the more traditional American butter in a recipe, that we actually noticed how much of a difference it made. Plugra provided a rich, creamy, buttery flavor, giving desserts that much more of an amazing texture and flavor profile. Sweet Society will bake with nothing less than 82%, and is why we consider Plugra to one of our favorite ingredients.
