Fortune Cookies Recipe

Ok, maybe not, but fortune cookies are still a fun little treat whose fortune inside is that little something extra to go with the crunchy cookie. This New Year's, we encourage you to make some fortune cookies for your family and friends with special messages written inside telling them what to expect in the new year.

Before You Get Started Making Fortune Cookies


Measure/Weigh all of the ingredients
Line a baking sheet with parchment paper or a silicone mat
Make your own fortune cookie template if you'd like. Cut out a 3.5 to 4 inch round circle out of a thick cardstock paper or craft plastic like we did
Cut out 2 1/2 x 1/2 inch fortune strips with your special message written on them
Preheat oven to 350 degrees (F)

Fortune Cookie Ingredients And Amounts (Yields 10-12 cookies)


2 (60g) egg whites
1/3 cup (67g) granulated sugar
4 tbsp (57g) butter - melted and cooled a bit
1/2 cup (63g) all-purpose flour
1/4 tsp (1g) salt
1/2 tsp almond extract
1/2 tsp lemon extract

Fortune Cookies Step-By-Step Directions


1) Preheat oven to 350 degrees (F).

2) In the bowl of a stand mixer fitted with a whisk attachment (or mixing bowl if using a handheld mixer) whisk egg whites on low speed until light and foamy.

3) When the egg whites are foamy, sprinkle in the granulated sugar and turn the speed up to medium. Whip until the egg whites form soft peaks.

4) When the egg whites are soft peaks, turn the mixer to low and add in the melted butter, mixing until incorporated.

5) Add in the flour, salt, and the extracts and mix until the batter is fully combined.

6) Drop a heaping teaspoon of batter onto your lined baking sheet and smooth into a flat circle (about a 4-inch circle) with an angled spatula or back of a spoon. Make yourself a template for ease.

7) Bake for 5-8 minutes until edges are light golden brown. Only bake 2-3 at a time. The assembly can be tough if you bake too many at once.

Bowl with a thin lip
Cupcake pan
Spatula

Assembly

1) When the fortune cookie has baked with golden edges, take the pan out of the oven, and immediately place the fortune cookie strips on top of the cookie.

2) Using a spatula, fold the fortune cookie in half.

3) Pick up the cookie, holding the seams closed, press it down onto the lip of a bowl (don't worry if the seams won't stay closed).

4) Place the cookie in a cupcake pan to keep it's shape.

5) You have to work fast and the cookies are hot, so start baking only 1-2 cookies at a time, and when you get the hang of it, do 2-3 cookies a time.
